Cinnamon Applesauce Bread

Ingredients

Bread

1/3 cup (56.6 g) light brown sugar

2 teaspoons (5.3 g) ground cinnamon

2/3 cup (133 g) regular or coconut sugar

1/2 cup (109 g) vegetable oil

2 eggs OR  ½ cup chia gel OR 1/2 c aquafaba

1 ½ teaspoons (6.3 g) vanilla extract

1 ½ cups (210 g) Better Batter Gluten Free flour, regular or artisan blend

2 teaspoons (9.6 g) baking powder

½ teaspoon (2.4 g) baking soda

1 teaspoon (2.2 g) nutmeg

½ cup (123 g) milk or nondairy milk – we recommend So Delicious Coconutmilk

2 apples, peeled and chopped (any kind) into 1/2 inch dice, mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon

 

Glaze

½ cup (62.5 g) of powdered sugar

1-3 tablespoons (15.3-45.9 g) of -So Delicious Coconutmilk, more or less to taste or desired consistency

 

Instructions

Preheat oven to 325° F. Use a 9×5-inch loaf pan and spray with non-stick spray, line with foil and spray with non-stick spray, or if desired line with parchment paper and spray.

Mix brown sugar and cinnamon together in a bowl. Set aside.

In a second, medium-sized bowl, blend white sugar and oil together using an electric mixer until smooth and creamy. Beat in eggs/gel/aquafaba, until well blended and smooth.  To the egg/sugar/oil mixture, add vanilla extract and stir well to evenly combine.

In a third bowl, whisk together flour, baking powder, baking soda and nutmeg. Add to wet mixture and stir until blended. Whisk milk into batter until smooth. If you are using the artisan blend, allow to sit for 7-8 minutes before proceeding.

Pour half of the batter into the prepared loaf pan; add half of the apple mixture. Lightly pat apple mixture into batter. Then add half of the brown sugar/cinnamon mixture.

Pour the remaining batter over the apple layer and top with remaining apple mixture, then the remaining brown sugar/cinnamon mixture.

Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spatula.

Make the glaze – mix powdered sugar and coconut milk together until well mixed. Cover well and set aside.

Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes. Remove from oven and allow to cool for about 15 minutes before unmolding.

Glaze the top of the warm loaf and allow to cool completely before serving/wrapping.
