— Chocolate: No Whey Chocolatey Morsels,, Enjoy Life Chocolate, Nestle Simply Delicious morsels

— White Chocolate: No Whey Milkless Polar Dream White Morsels

— “Cream”: Rich’s Darifree whipped topping liquid, So Delicious creamer, Full fat coconut milk solids (from a can)

Ingredients

8 oz chocolate (you may use any chocolate, including white. For dairy free, we prefer Enjoy Life or Nestle Simply Delicious morsels)

4 oz cream or dairy free sub, such as coconut milk (we prefer Rich’s Darifree or SoDelicious creamer)

Toppings: sprinkles, chocolate curls, cocoa etc as desired – about 2 c at least

 

Optional Add Ins

Spices – up to 1/2 tsp. Cinnamon, Chipotle Pepper, etc, or instant coffee granules, to taste

Extracts – up to 1/2 tsp.  any flavor (we prefer Raspberry), Cordials or liquers

Instructions

In a microwave safe bowl, mix together the chocolate and cream or dairy free sub. Microwave on High in 30 second increments, stirring well between each increment. Melting the chocolate should take between 30 seconds and 1 minute 30 seconds – watch it carefully so it doesn’t burn!

Stir in any desired flavoring agents (spices, extracts, liquors, etc). We recommend 1/2 tsp but you can flavor to taste. Remember the flavor will get stronger as these sit.

Pour into a shallow container and chill for 30 minutes.

Meanwhile, place desired coatings in bowls and set aside.

When the truffle filling is thick, scoop 1 ounce (1 tbsp) balls out, and roll in coatings.

Place on liners before packing in an airtight tin (we recommend mini cupcake liners)

If made with dairy or perishable ingredients, refrigerate immediately and eat within a week.
